The marc is then drawn off and pressed; the wine is placed in stainless steel tanks and the ideal conditions for malolactic fermentation are created. During the months preceding the winter period, racking is carried out in order to clarify the wine. Subsequently, approximately 60% of the mass is placed in French Allier barriques and tonneaux, where it ages for a variable period of 12-15 months, while the remaining 40% ages in steel.
