Merlot 45%, Cabernet Sauvignon 30%, Cabernet Franc 25%
Coming from the historic vines imported to Lispida by Count Corinaldi, the two Cabernets (Franc and Sauvignon) and the Merlot blend into a harmonious and fascinating wine as handed down by the Bordeaux tradition. The vines from which this wine is obtained are on average 80 years old and despite the expanded training system they produce a very limited quantity of grapes .
The name of our most important red wine takes inspiration from the famous work of the great poet Petrarca, who lived the last seven years of his life in Arquà where he was able to keep alive his great passion for agriculture and viticulture.
The meaning of the term Compendium , literally translated from Latin, indicates weighing together , or the essence, the summary, and it is precisely this meaning that inspired the La Costa company, which wanted to produce a great wine that brought together all the qualitative peculiarities of viticulture and wine in the Euganean Hills.
Once ripe, the grapes are harvested manually in crates and transported to the cellar, where they are destemmed and fermented in steel tanks for 15-20 days, depending on the vintage. After racking, the wine is placed in French oak barriques (Allier) where it remains for about 14-18 months for refinement. After a few rackings, it is filtered, bottled and left in the bottle for a few months.
