Moscato Giallo is a symbol of the Euganean Hills, a vine that has been present on the gentle slopes since the Middle Ages. It spread especially under the dominion of the Serenissima, thanks to the particular characteristics linked to the nature of the subsoil of volcanic origin, which enhance the finesse of the aromas and the consistency of the taste of this grape.
The La Costa Company wanted to pay homage to the great poet Petrarca, who spent the last years of his life in the hills of the province of Padua, with one of the historic vines of the area. The number seven and its multiples recur repeatedly and mark the most important stages of his restless existence. After leaving Arezzo, his homeland, he spent 7 years of carefree adolescence and great illusions; he studied in Bologna for 14 years of “youthful boldness” and social life; and finally on 6 April 1327 he met Laura and began his love, intense and desperate, for a good 21 years until she died on 6 April 1348.
The harvest is divided into two distinct moments: depending on the year, the grapes are initially harvested at the beginning of maturity to keep the characteristic aroma intact and fresh and, about 20-30 days later, the bunches with the highest sugar content are harvested in a sort of “semi - late” harvest . The grapes, once they arrive in the cellar, are destemmed, cooled to a temperature of 7-8°C and softly pressed using an automatic press. The must obtained is placed in a steel tank for 12 hours at a controlled temperature to clarify. Decanted, it is fermented at a controlled temperature of 18-20°C until an alcohol content of about 10.5-11% vol, so that the wine remains slightly sweet. Cooled and filtered, it is left for a short period in the tank and immediately bottled.
