Pinot Grigio was born from a bud mutation of Pinot Noir and spread in France, especially in Alsace.
Having arrived in Italy a long time ago, it has found its second home in Veneto, expanding to all the provinces. It has recently spread to the Euganean Hills, thanks to its particular adaptability and the excellent results obtained.
The harvest is done by hand, in crates, when the grapes have reached optimal ripeness. The grapes, once they arrive in the cellar, are destemmed, cooled to a temperature of 7-8°C and softly pressed using a pneumatic press; the must obtained is placed in a steel tank for 12 hours at a controlled temperature to clarify. Decanted, it is fermented at a controlled temperature of 18-20°C. After being cooled and filtered, the wine obtained is left in the tank for a short period and immediately bottled.
