The company boasts a certain experience with Pinot Noir, especially in the field of sparkling wines obtained with the traditional method. Over the last few years, the desire to create a wine capable of satisfying even the most passionate consumer has grown, a fine, elegant wine that highlights the characteristics of our territory. All this was possible thanks to a new plant, created by paying the utmost attention to choosing the right clone. 2020 marked the first production year of Pinot Noir vinified in red.

Once the grapes have reached perfect ripeness, the bunches arrive in the cellar and are destemmed, pressed and sent to the winemaker. Fermentation takes place in contact with the skins for 10 days at a controlled temperature of 25 degrees during which pumping over is carried out at very specific moments in the process. The marc is then drawn off and pressed; the wine is placed in stainless steel tanks and the ideal conditions for malolactic fermentation are created. During the months preceding the winter period, racking is carried out in order to clarify the wine. Subsequently, approximately 60% of the mass is placed in French Allier barriques and tonneaux, where it ages for a variable period of 12-15 months, while the remaining 40% ages in steel. Our oenologists will define the final assembly and the appropriate time for bottling. Our Pinot Noir ages for a further 5 months in the bottle before being marketed.

The color is a bright ruby ​​red with garnet reflections. Its bouquet is complex and elegant with hints of small red fruits, blackberries, cherry jam and spicy notes of cloves, licorice and vanilla. In the mouth it excites, it is fine but with character, full and persistent, of good structure, with soft and enveloping tannins that contribute to maintaining a certain cleanliness on the palate.

Our Pinot Noir pairs perfectly with game-based second courses and braised game, but also finds space paired with first courses with ragù.
