The numerous researches carried out have not been able to identify with certainty the true homeland of the Prosecco grape, but it is certain that the name of this vine was given by the homonymous town near Trieste, where it was initially called Glera. In the town of Prosecco, despite boasting the birthplace of this vine, today it is no longer present except in very limited quantities.
Another thing that is certain is that the Prosecco grape has been cultivated since time immemorial on the slopes of the Euganean Hills and can therefore be considered in all respects native to this territory. It has found in the Euganean Hills an enviable and particular habitat where it expresses high levels of quality.
The grapes are harvested slightly before they are fully ripe, since the alcohol content of the base wine does not exceed 10.5% vol. The grapes arriving at the cellar are destemmed, cooled to a temperature of 7-8°C and softly pressed using a pneumatic press. The must obtained is placed in a steel tank for 12 hours at a controlled temperature to clarify and racked. It is then fermented at a controlled temperature of 18-20°C. Constant and careful checks are carried out to determine whether further racking or other cellar operations are necessary. The wine is filtered and prepared for refermentation which takes place in special tanks called autoclaves, where it reaches the desired pressure and releases all the quality requirements.
Type: Extra Dry Sparkling Wine
Tasting: Fresh and graceful aromatic profile with sensations reminiscent of a floral bouquet and notes of fruit and citrus. The wine is, like the scent, carefree, pleasant, fresh and terribly captivating.
Alcohol content: 11.5% vol
Pairings: At any time alone. As an aperitif and with raw fish appetizers. As a snack with cold cuts and light cheeses.
