The numerous researches carried out have not been able to identify with certainty the true homeland of the Prosecco grape, but it is certain that the name of this vine was given by the homonymous town near Trieste, where it was initially called Glera. In the town of Prosecco, despite boasting the birthplace of this vine, today it is no longer present except in very limited quantities.
On August 11, 2020, Prosecco DOC Rosé was recognized in Italy in the sparkling version with the publication of the modification to the Production Regulations in the Official Journal no. 200.
On 28 October 2020, with the publication in the Official Journal of the European Union no. C 362, Prosecco DOC Rosé was also recognised in EU and non-EU countries, definitively completing the procedure provided for by the
current legislation regarding the modification of the specifications.

The grape harvest takes place slightly before full ripeness, given that the alcohol content of the base wine does not exceed 11% vol. The Glera grapes arriving at the cellar are destemmed, cooled to a temperature of 7-8°C and softly pressed using a pneumatic press. The resulting must is placed in a steel tank for 12 hours at a controlled temperature to clarify and racked. It is then fermented at a controlled temperature of 18-20°C. The Pinot Noir is vinified separately through fermentation in contact with the skins.

Through constant and accurate checks, it is assessed whether further racking or other cellar operations are necessary.
The process continues through a blend between the two base wines thanks to which the typical rosé colour is assumed.

The wine is filtered and prepared for refermentation which takes place in special tanks called autoclaves, where it reaches the desired pressure and releases all the quality requirements.
