It was born in March 2002, when the Facchin brothers and their father Giovanni tasted a wine from an early harvest in the cellar, very acidic and low in alcohol, perfect for becoming a sparkling wine. Before being presented on the market, it had to mature in the cellar for a long time and remain known to a few: this is why the name Secretum, contextualized in the Petr arca line and inspired by the Latin work Secretum meum or De secreto conflictu curarum mearum by the great poet. The three books that compose it deal with a dialogue between Petrarca and the theologian and philosopher Saint Augustine in the presence of a woman who personifies the Truth and contain a long confession of the poet who recognizes himself guilty of sins and morbidly attached to earthly passions, first of all lust. The classic method La Costa could only be dedicated to this work, a wine full of charm, intriguing, perverse and sensual.
Secretum 120 months is a project created in March 2020, following the prolonged aging for 10 years of the classic method sparkling wine Secretum, which gave rise to a product with character, mature compared to its younger brother which is refined on the lees for 24 months.

The grapes are harvested slightly before they are fully ripe, since the alcohol content of the base wine must not exceed 10.5-11% vol. The grapes, collected in crates, are cooled in the cellar in a special cold room to a temperature of 7-8°C and gently pressed using a pneumatic press. The must obtained is placed in a steel tank for 12 hours at a controlled temperature to clarify. It is then decanted, filtered and prepared for refermentation by adding selected yeasts and sugar. It is placed in bottles, capped with bidule and metal crown cap. At the chosen moment it is placed on the pupitre to obtain the necessary tip for the complete cleaning of the bottle by expelling the precipitates formed by the refermentation. After having performed the degorgement, the bottle is capped and left to rest for a few months before being put on sale.

Complex on the nose, evident aromas of ripe yellow pulp fruits and bread crust. In the mouth the very fine bubbles caress the palate producing a pleasant and captivating sensation. Long, aromatic and winning in the finish.

Tasting: As a demanding aperitif and throughout the meal, it can be delicate with vegetables and fish, masculine and decisive with meat.

Temperature: Serve at 8-10°C
