The Serprina grape is, as it is the same from a viticultural point of view, considered synonymous with the Prosecco grape. Despite numerous researches, it is difficult to identify its true homeland, but it is certain that the name of this vine was given by the homonymous town near Trieste, where it was initially called Glera. In the town of Prosecco, today it is no longer present except in very limited quantities. Another certain thing is that the Serprina grape has always been grown on the slopes of the Euganean Hills and therefore can be considered in all respects an indigenous grape of this territory, where it expresses high levels of quality.
The grapes are harvested slightly before they are fully ripe, since the alcohol content of the base wine does not exceed 10.5% vol. The grapes, once they reach the cellar, are destemmed, cooled to a temperature of 7-8°C and softly pressed using a pneumatic press. The resulting must is placed in a steel tank for 12 hours at a controlled temperature to clarify. Once racked, it is fermented at a controlled temperature of 18-20°C. Constant and careful checks are carried out to determine whether further racking or other cellar operations are necessary. The wine is filtered and prepared for refermentation, which takes place in special tanks called autoclaves, where it reaches the desired pressure.
Type: Sparkling white
Tasting: Fresh and graceful aromatic profile with sensations reminiscent of a floral bouquet and notes of fruit and citrus. It offers the same requirements as sparkling prosecco accompanied by a sweeter frothiness.
Alcohol content: 11.5% vol
Pairings: At any time alone. As an aperitif and raw fish appetizers. As a snack with cold cuts and light cheeses.
